1 pint Santa Sweet Grape Tomatoes, washed, stemmed and cut in half
6 slices bacon, cooked and crumbled
¼ cup mayonnaise
1 Tbsp tarragon vinegar (can substitute red wine vinegar)
2 Tbsp olive oil
1 Tbsp chopped fresh basil
¼ tsp salt
6 Romaine lettuce leaves
2 Tbsp chopped chives
Place tomatoes and bacon in medium-sized bowl. In small bowl, mix together mayonnaise, vinegar, olive oil, basil and salt. Add mayonnaise mixture to tomatoes and bacon; toss until well coated. Place lettuce leaves on serving platter and top with tomato mixture. Sprinkle with chives. Serve immediately or refrigerate until ready to serve.
