Serving Suggestion

The McCutchen family roast chicken dinner is simple to prepare—and delish! Slow roast breast-side down by placing birds on a bed of sliced onions (covered with enough water to preserve the onions till bird juices flow). Lightly stuff birds with carrot and onion pieces. Sprinkle on sage, thyme, rosemary, salt and pepper. Cover and slow roast at 200-300 degrees for about an hour, depending on the oven.

Jumbo Chickens are aged longer and range from 6.75 to 8+ pounds.  They can be cooked whole or cut in portions.  Either way these chickens are loaded with tender juicy meat and can feed 10 to 14 people. For discriminating diners who crave nothing but the best artisan-farmed poultry that’s fork-tender tasty, these choice birds are the perfect selection.
