The McCutchen family roast chicken dinner is simple to prepare—and delish! Slow roast breast-side down by placing birds on a bed of sliced onions (covered with enough water to preserve the onions till bird juices flow). Lightly stuff birds with carrot and onion pieces. Sprinkle on sage, thyme, rosemary, salt and pepper. Cover and slow roast at 200-300 degrees for about an hour, depending on the oven.

A roaster chicken is between 5-6.5 pounds (2.72-3.63 kg).  Larger chickens like roasters are noted for having a slightly stronger and richer flavor, which develops well when they are roasted.  Due to its larger size, a roaster chicken is usually roasted whole, though they may also be cut up and fried.  Great for rotisserie barbecue and back yard parties.
