The McCutchen family roast chicken dinner is simple to prepare—and delish! Slow roast breast-side down by placing birds on a bed of sliced onions (covered with enough water to preserve the onions till bird juices flow). Lightly stuff birds with carrot and onion pieces. Sprinkle on sage, thyme, rosemary, salt and pepper. Cover and slow roast at 200-300 degrees for about an hour, depending on the oven.
Roaster Chicken (4 count)
Raised In: Mason, WI
A roaster chicken is between 5-6.5 pounds (2.72-3.63 kg). Larger chickens like roasters are noted for having a slightly stronger and richer flavor, which develops well when they are roasted. Due to its larger size, a roaster chicken is usually roasted whole, though they may also be cut up and fried. Great for rotisserie barbecue and back yard parties. For discriminating diners who crave nothing but the best artisan-farmed poultry that’s fork-tender tasty, these choice birds arethe perfect selection.

Angel Acres Farm offers the ultimate in humanely farmed poultry that are cuts above commercially produced chicken. The birds are nourished with a transitional organic field-feed mixed with flax seeds—making them healthy and redolent with natural tasting goodness. They’re also given room to, as Eileen McCutchen describes it, “hop and cluck about our green pastures.” Happy meat and game hens end up as happy cooked meat—happily too, for jaded diners who relish these subtle vibes.
