Recipe: Fresh Fig Cake

Ingredients

1/2 cup Butter
1 cup Sugar
1/2 teaspoon Vanilla
1/2 teaspoon Salt
2 Eggs
2 teaspoons Sour Cream
1 teaspoon Baking Soda
1 teaspoon Baking Powder
2 cups Flour
1 cup Fresh Figs (Best if using overripe Black Mission or Kadota Figs)

In a bowl combine butter and sugar, salt and vanilla until creamed. Add eggs and beat well.  Add sour cream soda, baking powder.  Slowly sift in flour until all ingredients are combined.  Figs should be pealed of all stem and outside skin and mashed together, then added to batter and well mixed. Pour into 9x13 glass pan sprayed with all purpose cooking spray.  Bake for 45 minutes or until knife comes out clean.

Frost with Confectioner’s sugar icing.

Top with fresh fig slice and serve.

We escape the early summer heat by wandering under the massive fig tree in the backyard, reaching for the bursting purple figs hanging close to our fingertips…

Sweet, sticky juices run everywhere. Laughing, we pick as many as we can for the delicious fig jam I’m going to make later.  Try our luscious early summer figs.  Perfect with a cool summer salad, or perhaps try as a delightful finish to your ideal luncheon.

Now is the time to get them from this third-generation orchard owned by a Simone family member who brought figs to America in the 1920s.

First Crop (July) is a short season lasting about two weeks.  Figs are teardrop in shape with thin black skin and a reddish flesh. Sweeter than honey these larger figs are the cream of the crop.  Second crop is more abundant, but smaller and round in shape (August).  Blacks are good shipping figs that ripen with time are available sometimes through November depending on weather conditions.

Storage

Like strawberries, figs are susceptible to mold. Refrigerate figs, but away from foods such as onions as the skin absorbs odors. This mythical fruit from the Garden of Eden can be frozen to enjoy year-round.
