These specialty mushrooms have a distinctive coral-like look, a rich, earthy aroma and oaky flavor with a sweet finish.  They can be quite large, over 6 inches in diameter, with many adjoining leaves. Some say they resemble the back feathers of wild hens, thus, their name.  Hen of the Woods must be cleaned thoroughly due to their many overlapping caps. Also known as Maitake in Japan, sauté this rich-tasting mushroom for use in all types of main dishes, side dishes and soups.
